Zesty Watermelon Sorbet

This recipe is the perfect summer snack - so simple, there are literally 2 ingredients and we feel that something this simple and this delicious needs to be celebrated.

Ingredients:

700g watermelon, cubed into 3cm chunks

Juice & zest of 1 lime

Method:

Start by cutting the watermelon into 3cm chunks. Arrange the pieces on a baking tray lined with parchment paper to prevent sticking. Freeze the tray overnight or for at least 5-6 hours until the watermelon is completely frozen.

Once frozen, transfer the watermelon chunks to a blender. Add the juice and zest of one lime.

Blend until the mixture reaches a shaved ice consistency, stopping occasionally to scrape down the sides if needed.

Serve the shaved watermelon ice immediately, garnishing with additional lime zest for extra flavour.
