High Protein Chicken and Zucchini Patties

Ingredients: ⁠
1kg chicken mince⁠
2 grated zucchinis ⁠
2 eggs ⁠
1 cup of our breadcrumbs ⁠
1 clove of garlic or teaspoon of garlic powder⁠
2 teaspoons of dried herbs (we used dill)⁠
Salt to taste ⁠
Oil for frying ⁠

Method: ⁠
1. Grate the zucchini into a bowl, add some salt, mix and leave to sit for 5 minutes. Then squeeze the zucchini to extract excess moisture (this helps prevent the patties from going soggy). ⁠
2. Add all of your ingredients to a bowl and give it a good mix! Feel free to get your hands dirty.⁠
3. Heat some oil in a frying pan and spoon the chicken mixture. Gently press it down to form a patty. ⁠
4. Cook each side for a few minutes until golden brown. Drain on some paper towel.
